The tasty ottappam is a Malabar special soft pancake, usually made in a traditional earthen pan. Rice flour, salt, egg, and water are the major ingredients used for making this dessert. The ottapam which is cooked in high heat after mixing the ingredients, gives a good spongy texture. This soft pancake can be then served along with a spicy treat like chicken curry or vegetable stew.
